Ingredients:
1 large English cucumber, thinly sliced
1 large Gala red apple sliced into matchsticks/small wedges
2 tablespoons fresh dill, chopped
1/4 small red onion, thinly sliced (optional)
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon maple syrup or honey (optional)
Salt and freshly ground black pepper, to taste
Method:
1. Prepare the Salad: In a large bowl, combine the thinly sliced cucumber, apple, and chopped fresh dill. If using red onion, add it as well.
2. Make the Lemon Vinaigrette: In a small mixing bowl, whisk together the olive oil, fresh lemon juice, Dijon mustard, and maple syrup (or honey). Season with salt and pepper to taste. Whisk until the vinaigrette is well combined and emulsified.
3. Toss the Salad: Pour the lemon vinaigrette over the cucumber, apple, and dill mixture. Toss gently until the salad is evenly coated with the dressing.
4. Serve: Transfer the salad to a serving bowl or platter. You can sprinkle some extra chopped dill on top for a bit of added color.
TIPS:
Add texture: thinly sliced radishes or arugula
Add crunch: toasted almonds or sunflower seeds
Prevent apple browning: toss with lemon juice before adding
The dressing will also work with no dijon and maple syrup.
