Ingredients:
• 1 lb chicken breast, diced
• 1 cup coconut milk (light)
• 1 tbsp curry powder
• 1 onion, diced
• 1 cup spinach
Instructions:
1. Heat a pan and sauté onion until softened.
2. Add chicken and cook until browned.
3. Stir in coconut milk, curry powder, and spinach.
4. Simmer for 10 minutes and serve with cauliflower rice or quinoa.
