CRISPY BAKED TOFU WITH VEGGIES


Ingredients:

• 1 block extra-firm tofu, cubed

• 1 tbsp olive oil

• 2 cups broccoli florets

• 1 red bell pepper, sliced

• 1 tbsp soy sauce (or coconut aminos)


Instructions:

1. Preheat oven to 400°F (200°C).

2. Toss tofu and veggies with olive oil and soy sauce.

3. Spread on a baking sheet and bake for 25 minutes, flipping halfway.

4. Serve over rice or quinoa.
