Ingredients:
1 lb shrimp, peeled and deveined
1 cup chickpeas, rinsed and drained
1 cup sweet peppers, sliced
1 tbsp harissa paste
1 tbsp olive oil
1/2 tsp smoked paprika
Juice of 1 lime
Method:
Preheat: Preheat oven to 400°F (200°C).
Toss: Toss shrimp, chickpeas, and sweet peppers with olive oil, harissa paste,
smoked paprika, and lime juice.
Roast: Spread everything onto a sheet pan and roast for 15-18 minutes, stirring
halfway through.
Serve: Serve with fresh herbs like cilantro or parsley for added flavor and gut
support and avocado for healthy fats.
