HARISSA SHRIMP WITH SWEET PEPPERS AND CHICKPEAS


Ingredients:

  • 1 lb shrimp, peeled and deveined

  • 1 cup chickpeas, rinsed and drained

  • 1 cup sweet peppers, sliced

  • 1 tbsp harissa paste

  • 1 tbsp olive oil

  • 1/2 tsp smoked paprika

  • Juice of 1 lime


Method:

  1. Preheat: Preheat oven to 400°F (200°C).

  2. Toss: Toss shrimp, chickpeas, and sweet peppers with olive oil, harissa paste,

    smoked paprika, and lime juice.

  3. Roast: Spread everything onto a sheet pan and roast for 15-18 minutes, stirring

    halfway through.

  4. Serve: Serve with fresh herbs like cilantro or parsley for added flavor and gut

    support and avocado for healthy fats.
