QUINOA AND BLACK BEAN SALAD


Ingredients:

• 1 cup cooked quinoa

• 1 cup black beans, rinsed and drained

• 1/2 cup cherry tomatoes, halved

• 1/2 avocado, diced

• 2 tbsp lime juice

• 1 tbsp olive oil

• Salt and pepper to taste


Instructions:

1. Combine quinoa, black beans, tomatoes, and avocado in a bowl.

2. Drizzle with lime juice and olive oil.

3. Toss and season with salt and pepper.
