QUINOA BERRY BAKE

Ingredients:
2 large bananas
1 1/3 cups plant-based milk (such as MALK almond milk)
2 tablespoons real maple syrup
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup mixed fruit (such as strawberries, blueberries, raspberries, and blackberries)
2 scoops Protea protein powder
1 cup quinoa
Method:
Preheat your oven to 350°F (180°C) and grease a large baking dish.
Peel the bananas and place them in the greased baking dish. Use the back of a fork to mash them up until they are smooth and create a layer of mashed bananas in the dish.
In a separate bowl, combine the plant-based milk, maple syrup, vanilla extract, ground cinnamon, and salt. Whisk well until all the ingredients are thoroughly combined.
Pour the milk mixture over the mashed bananas in the baking dish. Stir well to combine, ensuring that the banana layer is evenly coated with the milk mixture.
Add the protein powder to the mixture along with an additional 1/3 cup of plant-based milk. Stir until the protein powder is fully dissolved and the mixture is smooth.
Mix in the quinoa to add some texture to the dish. Make sure the quinoa is evenly distributed throughout the mixture.
Spread the mixed fruit evenly over the banana and quinoa mixture in the baking dish. The fruit layer will add sweetness and variety to the bake.
Place the baking dish in the preheated oven and bake for approximately 1 hour, or until the top is golden brown and the mixture is set. The exact baking time may vary, so keep an eye on it during the last few minutes of baking.
Once baked, remove the Quinoa Berry Bake from the oven and let it cool slightly before serving.
